<strong>Ingredients:</strong><br />
<strong>* 150g Butter<br />
* 150g sugar<br />
* 3 eggs<br />
* Peel of 1 lemon (I didn&#8217;t have this, and it was fine)<br />
* 1 tsp vanilla essence<br />
* Rum essence (to your taste, I just poured about a shots worth)<br />
* 250g flour<br />
* About 2 tsps baking powder<br />
* ~1/2 cup milk, room temperature<br />
* Peaches, peeled and halved (I cut into tiny pieces)<br />

<ul><span style="text-decoration: underline;">Method</span></ul>
<p></strong></p>
<p>Preheat oven to 375°F.<br />
Cream the butter, sugar, lemon peel, vanilla and rum essences together. Add in eggs one at a time (I forgot and added it at the same time as previous ingredients and it was still fine).<br />
<br />
Whisk the flour and baking powder and fold into the butter mixture. Add half of the flour and the milk and gently incorporate.  Then add the remaining flour mixture, mixing just until combined.<br />
Pour the batter into a springform (24cm or 9.5” diameter is what we used). Spread out the peaches, cut side down, across the batter.<br />
<br />
Bake for about 45 minutes.  After the cake has cooled, spread some apricot or peach jam on top and dust with powdered sugar (I didn&#8217;t do any of this, but apparently the jam gives it a nice shine).<br />

			<content:encoded><![CDATA[<p>It&#8217;s been a month of awesome fresh, local food! This has affected the quantity of vegetables we eat and the type of food we make. We&#8217;ve been pretty open about trying new recipes, asking friends or just googling, and they&#8217;ve all turned out amazing! It has taken a lot of commitment to cook (almost) every night and try to use the fresh ingredients. Especially because we know we&#8217;re getting new ones on Saturday.<br />
<br />
For the most part it&#8217;s worked out, although we cheated a little bit this week with the green beans. I&#8217;m not a huge fan of them, we cooked them on two different days (still leftover from week 3), and gave the week four one&#8217;s to one of our friends.<br />

But, I&#8217;m getting ahead of myself&#8230;<br />

<strong>Week 4 share</strong>:<br />

The wonderful thing about having fresh corn is making a crisp salad with it!<br />

Just chop up <strong>radishes, corn, </strong>tomatoes, onion, and mix with some blue cheese, a little bit of olive oil and a splash of balsamic vinegar.<br />
<br />
Proof that we did eat some green beans:<br />

We tried the same recipe for <a href="http://apartmentfour.com/blog/?p=102#more-102">cream sauce and peas</a>, substituting <strong>zucchini </strong>and <strong>yellow squash</strong> into the recipe.<br />

We had a friend over and wanted leftovers, so we doubled the recipe (again, using milk and butter instead of cream).<br />

However, we found out that doubling the amount of jalapeños was probably not the brightest idea, since they were very fresh ones. This dish came out super spicy, and I&#8217;m kind of a wimp&#8230; but we still ate it. This time with white rice&#8230;<br />

We also made pasta primavera, with the zucchini and squash, and cucumber sandwiches, but didn&#8217;t take pictures.<br />
For the cucumber sandwiches, we mixed mayonnaise, mustard, salt, pepper and cilantro on decrusted wheat bread. So refreshing for summer!</p>

			<content:encoded><![CDATA[<p>Well, life got in the way of blogging these past few days&#8230; or over a week. Although, my last post was after fourth of July, and that was a super busy weekend. Between going to NYC to see Jade and Eric, having Eric come to visit on Saturday, Argentina&#8217;s loss, bbq and movie outside, wine tasting, and going to The Place&#8230; very nice long weekend. Then, more world cup during the week, which culminated in a less-than-exciting final game.</p>
<p>But I digress&#8230;</p>
<p><strong>Week 3 share</strong>, aka: when we learn exactly <em>how many </em>different types of pod vegetables exist<strong>:</strong><br />

* Snap peas<br />
* Shell peas<br />
* Green beans<br />
* Zucchini<br />
* Yellow squash<br />
* Spinach<br />

<p>Luckily one of our friends gave us this amazing recipe that can be used with peas (although it can also be used with squash, so that&#8217;s another option).</p>
<p><strong>Cream Sauce &amp; Peas Recipe</strong></p>
<p><span style="text-decoration: underline;">For the sauce</span>:<br />
* 1/4 tsp sugar<br />
* 1/2 tsp ground cumin<br />
* 1/2 tsp garam masala<br />
* 3/4 tsp salt<br />
* 1/4-1/2 tsp cayenne pepper<br />
* 1 tbsp tomato paste - she didn&#8217;t think it was necessary, I added a tiny bit with the spices&#8230;<br />
* 3/4 cup heavy whipping cream (or milk with butter, turned great!)<br />
* 1 tbsp lemon juice (lime juice also works)<br />
* 2 tbsp chopped fresh cilantro (used dried cilantro, and it was ok, although I&#8217;m sure fresh is yummier)<br />
* 1 green chile, finely chopped (don&#8217;t remove seeds)<br />
(I adjust all of these ingredients depending on how strong the flavor is and the amount of cream that I have)</p>
<p>Mix sugar, cumin, garam masala, salt, cayenne pepper and maybe tomato paste if you have that with 2 Tbsp of water. Then add cream and mix. Then add lemon juice, cilantro and green chile and mix.</p>
<p><em></em><span style="text-decoration: underline;">For the peas &amp; onion part</span>:</p>
<p>Boil or microwave the peas with water. Chop up a white onion and fry until soft, then add the peas + cream sauce mix. Super fast to make.</p>
<p>When you first combine them:<br />

<p>Then allow to simmer and it gets thicker:<br />

<p>Meanwhile, make some rice (I recommend white rice, since there&#8217;s so much flavor in the sauce).<br />

<p>Pour sauce over rice:<br />

Then put over some white rice. Delicious!</p>
<p><strong>Canelones de Espinaca (Spinach Canelones)</strong><br />
These are an argentinean staple, similar to stuffed shells or lasagna, but way easier to make. We had leftover crepes that our friend made (and she made it with gluten free flour&#8230;).</p>
<p>Basically, we just sauteed spinach with some onion and pine nuts. I usually add ricotta to this mixture, but I didn&#8217;t have any.</p>
<p>I also made some <strong>salsa blanca (bechamel sauce)</strong>:<br />
* 1 tablespoon butter<br />
* 1 tablespoon flour<br />
* 1 cup milk<br />
* salt, pepper, nutmeg</p>
<p>Added 1 tablespoon butter and allowed to melt in a small saucepan. Then, added 1 tablespoon of flour, and stirred until mixed, but before it browned. Remove from heat and add 1 cup of milk and stir, avoiding clumps. Add salt, pepper and nutmeg. Return to low heat and stir for a long while (10 minutes?) until it gets thicker.</p>
<p>Then I put some tomato sauce at the bottom of a baking dish, rolled the crepes with the spinach filling and mozzarella cheese, and placed on top of the tomato sauce. Topped with salsa blanca, then some tomato sauce on top of that, with mozzarella cheese on top. Baked at 350F for 20 minutes.</p>

What to do with peas week 1:<br />

<strong>FRIDAY</strong>:<br />

We had our friend&#8217;s going away party BBQ. We&#8217;ve known her for less than a year, but she&#8217;s been an integral part of our lives. She&#8217;s one of the most outgoing people I know. Case and point: one of the first times we were meeting up with her to play tennis, she was playing with some random people. We figured she knew them somehow, but it turned out she got there earlier and just introduced herself, borrowed one of their racquets and played with them.<br />
<br />
So Friday we were saying goodbye, as she moves forward and starts the grad school journey for herself in PA.<br />
<br />
Ryan had the day off, so after going to Pep Boys to get our car looked at&#8230; and after stopping by<a href="http://www.bluestatecoffee.com/"> Blue State </a> to watch the World Cup&#8211;USA vs. Slovenia with us&#8230; he went to make yummy salsa and delicious chimichurri.<br />
<br />
Chimichurri is a green sauce used in Argentina as a marinade to put on meat, but goes well with almost anything. The origin of its name has some cute stories about argentines not being able to pronounce an English name (you can read more about this on <a href="http://en.wikipedia.org/wiki/Chimichurri">wikipedia</a>). I don&#8217;t really know how much about this is true, all I can say is that it&#8217;s delicious. However, people make this sauce slightly differently. <strong>Basic ingredients: oil, parsley, garlic, vinegar, red pepper flakes. </strong><br />
<br />
<strong>Ryan&#8217;s recipe for chimichurri (Griselda approved!):</strong><br />
<br />
* Fresh cilantro-a bunch<br />
* 1 jalapeño<br />
* 2 teaspoons paprika<br />
* <strong>3 garlic whistles</strong> (scallions can be used instead)<br />
* 1 tablespoon minced garlic<br />
* salt and pepper-to taste<br />
* 2 teaspoons of crushed red pepper<br />
* 1/3 cup red wine vinegar<br />
* 1/3 cup extra virgen olive oil (EVOO, as Rachel Ray calls it)<br />

<strong>SATURDAY</strong>:<br />

Ryan was again doing stuff on the car from early in the morning. He was at the dealer until about 11am&#8230; and I was being very productive watching soccer. Then we got really tired out by playing Ultimate frisbee from about 11am until 1pm. I made a quick lunch of pastrami sandwiches using the nice <strong>lettuce</strong>, but I forgot we had chimichurri!!!<br />
<br />
Later that evening Ryan worked up the energy to make that <strong>Beet Rosti with Rosemary</strong>.<br />
<br />
Cut off the leaves (save those for later!), peel and dice up the <strong>beets</strong>. (Grating can also be done for this recipe).<br />
<br />
Finely chop two sprigs of rosemary.<br />
<br />
Mix in a bowl with 1/3 of cup of flour until all the beets are coated. Then, pan fry with EVOO, add salt and pepper to taste, until beets are tender.<br />

<strong>Sautéed beet leaves with bacon and garlic.</strong><br />
That&#8217;s right, the beet leaves are actually very yummy, they have a stronger flavor than spinach, and you can do similar things with them.<br />
<br />
Sauté the garlic and <strong>garlic whistle</strong> with EVOO. Add in chopped turkey bacon. Once the bacon browns, then add 1/3 cup water. Add in the <strong>beet leaves</strong>, and cook until the leaves and stems are tender.<br />

I added strawberries to raspberry lemonade, with some ice and honey. Another time I added bananas. And for breakfast on Sunday I used milk,  instead of the lemonade. All wonderful!</p>

			<content:encoded><![CDATA[<p>We have decided to embrace the &#8220;buy local&#8221; movement, just a tiny bit, and bought half a &#8220;share&#8221; of the <a href="http://www.hindingersfarm.com" target="_blank">Hindinger Farm</a> Community Supported Agriculture (CSA). This farm is only 5.5 miles away from our apartment!</p>
<p><strong></strong></p>
<p>Basically, Ryan and I (and two of our friends&#8211;each share technically feeds a family of four) stop by the farm once a week and pick up a basket of fresh fruits and vegetables. These will obviously vary by the season/month, but have been picked fresh within a few days and are harvested using &#8220;Integrated Pest Management&#8221;. So, it&#8217;s not organic&#8211;it does use pesticides, but is more common sense and is better for the environment.</p>
<p><strong></strong></p>
<p>The <a href="http://www.epa.gov/opp00001/factsheets/ipm.htm" target="_blank">EPA</a> says:</p>
<ol>Integrated Pest Management (IPM) is an effective and environmentally sensitive approach to pest management that relies on a combination of common-sense practices. (They) use current, comprehensive information on the life cycles of pests and their interaction with the environment. This &#8230; is used to manage pest damage by the most economical means, and with the least possible hazard to people, property, and the environment.</ol>
<p><strong></strong>Anyway, so we&#8217;ve signed up, and I picked up our first share today!</p>

We are still trying to figure out what one of the vegetables are&#8230; and we learned through cooking the peas, that they were in fact peas and not snap peas. Luckily both go well in stir fry!<br />

<p>I&#8217;m still learning about this, but apparently you can cut off the leafy part of the <strong>beets</strong> and use them like chard. Then you can put the root part into a plastic bag and it can store for weeks. Also, if you bake it in foil (for 45 minutes to 1.5 hours) it will stay in the fridge for 3-4 days.</p>

<li><span style="font-weight: normal;"><strong>2. Beet Rosti with Rosemary</strong>. We&#8217;ll probably use the recipe from Mark Bittman&#8217;s &#8220;How to Cook Everything&#8221;, but here&#8217;s on from the <a href="http://dinersjournal.blogs.nytimes.com/2008/05/02/recipe-of-the-day-beet-rosti-with-rosemary/" target="_blank">NY Times</a>. Basically it looks like you just grate the beets, add rosemary, and then put in a pan with butter.</span></li>
<li><span style="font-weight: normal;"><strong>3. Strawberries au natural. </strong><em>These were so yummy we ate half right off the box.</em></span></li>
<li><span style="font-weight: normal;"><strong>4. Pea soup</strong>.</span></li>

Spicy tuna with garlic whistle sandwich. </strong><em>We found this <a href="http://www.browniepointsblog.com/2005/06/27/spicy-tuna-with-garlic-whistles-sandwich/" target="_blank">recipe</a>, but basically I think it will add some yummy flavor to any sandwich.</em></span></li>

			<content:encoded><![CDATA[<p>We&#8217;ve had an amazing 2009, so I thought I&#8217;d share some pictures.</p>
<p>First of all, Ryan got into the Y@le S0M! He&#8217;s so excited to start next Fall. I&#8217;m just so proud of him. And of course because he&#8217;s part of the professional school, they already show them that they care about him&#8230; he got a nifty luggage tag with the S0M logo. Fancy! No pictures of this, however&#8230;</p>
<p>We did take some pictures on Xmas eve. We spent the holidays here at home, in CT. Which was wonderful, relaxing, but also kind of lonely. Most people were gone, so we made the most of it at home. After some lab work, I came home, looked in on our friends cat, then we went ice skating at the local rink. Going on Christmas eve is a plus, very very few people there. I took full advantage of front row seats in front of the fire place, and then an hour or so of skating! (Pictures to come soon, they&#8217;re on our phones).</p>
<p>Then we came home and cooked some dinner. Backstory: we went to NC for Thanksgiving again (so much fun, and we flew this time&#8212; no more 12 hours in the car with traffic!), which of course means watching the Food Network like ALL the time. No complaints here, since we haven&#8217;t had cable in almost 2 years, its fun to spend a week watching one of our favorite channel. Anyway, we saw Rachel Ray making a Thanksgiving mini-meal for two. Menu: Turkey cutlets&#8211;breaded, some side (zucchini and something else), and these apples with granola as an inside out pie, for dessert. So, I breaded up some turkey cutlets (that I didn&#8217;t even know existed before the show!), Ryan made up some cornbread and turkey stuffing and the apples. Everything came out lovely, and it was a fun way to spend Xmas eve. Then we watched a movie and just relaxed.</p>
<p>Christmas morning we were up really early and opened gifts! Ryan got Chumby One that he&#8217;s been wanting for ever! Ryan gave me the rest of my Hannukah presents that hadn&#8217;t arrived in time: a hot pink plastic cover for my MacBook, Hanson CDs (my old ones got stolen back in CA when they broke into my car) including two new ones!, and a slanket! The rest of the day was full of more movies and relaxing!!</p>

<p>This just in&#8230;Yesterday was Griselda&#8217;s birthday, and what an amazing day it was!  It started early, sine I was charged with baking duty, and had to leave enough time for a second round of baking just in case my first cake didn&#8217;t pan out&#8230;but the cake and the cookie brownie bars came out wonderful were a big hit at the party later one&#8230;but I&#8217;m getting agead of myself.</p>
<p>We also went to go see the Yale Rep production of Death of a Salesman.  While slow to start on this Saturday Matinee, a strong finish in Act II really moved the audience and finished strong.  When the show got out, it was already 5:20, not enough time to get home to finish the party preparations before our 6PM dinner reservations, so we dropped by Atticus, a small cafe book store, where we found &#8216;Little Miss Birthday&#8217;, a children&#8217;s book from a series of books Griselda grew up with&#8230;it was a must have&#8230;</p>
<p>Dinner at bespoke was excellent, of course.  Service great, food was great all around (G and I can attest for the hangar steak and the monkfish, personally).  Then it was back home for cake, brookies (Brownies+cookies), and ice cream&#8230;and a packed house!  I didn&#8217;t know 25 people could cram into our apartment!</p>
<p>Fun was had by all!  Thanks everyone who came to celebrate, and all the well wishes on behalf of G.  Pictures to come!</p>

Data. Sometimes I go TA and answer a billion questions about molecular biology. Then go home, to a yummy meal made by Ryan (last night it was freshly made pillsbury French bread with fresh mozzarella, tomato and avocado). My day picks up. Then I go analyze my non-data. <img src='http://apartmentfour.com/blog/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' /> </p>
<p>Repeat as necessary, and you realize that there are two things that cheer me up: Ryan and spring.</p>
<p>Then there&#8217;s the weekends. Softball (played by Ryan and I), tennis and ultimate frisbee. Throw in some yummy food (like the crack-addicting chicken from Lao Szechuan) and movies with friends&#8211; oh yeah and some lab work thrown in for good measure- and you got yourself a busy/fun two days.</p>
<p>So that&#8217;s what I&#8217;ve been up to, in a nutshell.</p>
